A drop of spring water (def not chlorinated tap water) helps separate the oils from the body of the whisky and so intensify the flavours, especially on peated malts like the fabulous Ardbeg (my current favourite).Less so on milder flavoured drams like Glenfiddich.

Edit: Apparently the oil is guaiacol that comes from the charred oak casks used to mature Scotch and has a characteristically sweet, smoky flavour. It's all to do with how it and water are attracted and repelled from water in the whisky. Ethanol tends to collect at the surface and so covers the nose of the guaiacol (simplification) From a Swedish research paper published last August. In the distillery, cask strength whisky, which can be more than 60% alcohol by volume, is typically diluted to 40-45%. The paper, published in the journal Scientific Reports, showed that diluting a whisky from 45% to 27% boosted the density of guaiacol at the surface by more than one third. Other flavour compounds are known to have similar behaviours, Karlsson said, meaning that the findings could explain the benefits of adding water."

Got me well and truly confused there Rich. However, one thing I do know, I love a nice single malt, generously poured, two ice cubes swirled round, and then gently sipped. Then repeated several times.

 

I think the water attaches to the ethanol so that it allows more guaiacol to be released to the surface to be nosed. Summat like that.
