Oil pressure going down as the oil warms up is perfectly normal. This is due to the viscosity change against temperature I.e. the oil becomes less viscous.
Revving the motor will bring it up to the relief valve setting which will then bypass capping the oil pressure at the set value. I don't have the specs. for this motor but the figures don't sound bad or ring alarm bells :p

Do you have a wiring diagram for the oil light circuit?

I have been searching for manuals for a while but have turned up nothing unless you buy a manual.
Oil pressure is about average for most modern engines that use a relatively low weight multigrade oil, 10 to 15psi is about the minimum you want to see at idle when hot, and anything from that to 60-80psi at WOT the PRV will be set to around 90-100psi which with cold oil it will easily see,

I am now very curious to see a manual as the comment on that link the guy is saying that there are two oil pumps one for oil pressure and one for cooling i am a little skeptical about this as it seems a very overcomplicated setup when one oil pump would easily achieve both ...and does so on a lot of car engines.

Good new, defo not engine oil starvation. Good news you have a great mate. Dash should fix it then, unless you’ve missed a wire going to earth/ground from switch to dash. Good luck. oh by the way most/all of the guys & girls on here like a Happy Ending o_O

The double oil and cooling pump is a combined oil and water pump.

Have you any links to a schematic of that? as its supposed to be a solely oil cooled motor no water cooling on that model which is why i am skeptical of any need to run two separate pumps for oil.

It’s a liquid cooled engine with one oil pump, one water pump, both systems operate independently of each other.
