The volatiles of the brew distil off at different rates and times, so you split the distillate into various “cuts”... the first off are likely to be the likes of ethanol and risky to drink, the end cuts are the more oily liquors and again not wanted (though they will go nicely into the next brew) what you drink is a blend of the “middle cuts”

Quiet day today.... so I’ve just put 15 litres of parsnip and ginger wine on to brew and racked 5 litres of tart cherry wine off the fruits...

And if it wasn't for covid we could have walked to the CAMRA national pub of the year which is only a 60 minute stroll across the ridgeway (more like 3 hours on the way back Lol). The pub is The Bell at Aldworth.

I brew beer but only the cheats way out of a can. Only cost 60 quid to start and after the first batch its about 30p a pint. You ve got a much more professional set up. I'm all plastic buckets and old Magners bottles. The results are nicer than the bought stuff all the same.
Tried home brewing when I was a kid, it was a Geordie beer home brew kit, Gawd it was vile , never ever brewed again.
