Take the cowl off sling a set of throw over panniers over the rear seat with a rucksack etc on top held down by a cargo net and you’re done! If you want the cowl put it in the rucksack and re fit when at destination

 

Errrm! Well, the panniers I found in my attic, probably 30 odd years old, made of plastic and cardboard, the backpack is xlmoto as pointed out here somewhere for around a very few pounds.
