There are lots of options out there at high mount/low mount, different prices and quality. I'm not sure about interchangeable side of things. I'm sure someone will come along with an answer.

I have an SP Engineering one on my '04 SE model, I chose their "big bore stubby" with satin black finish on the can to complement the all black finish of the SE, they also do it in polished stainless or carbon fibre finish. I am really pleased with it, comes with the link pipe and is well made - all stainless, and the bike runs well without any re-mapping. Also thought the price was reasonable at less than £200 (a couple of years ago). It sounds well without being outrageously loud and if you want it louder it has a removable baffle. It is all a matter of personal choice at the end of it, I wanted something pretty short and compact and this fits the bill perfectly for me. It is also down to your budget, I didn't really want to spend much more than £200 and in the end it was between SP Engineering and one of the Delkevic range which are both well made for a reasonable price. You will find what you want, it just takes time as there is a lot out there to choose from.

I have the Triumph CF can. It is not as light as some others but it looks and sounds awesome. It is not overly loud.
