Thought it went a little quiet on the exitment side. What sort of cut out? I've a big single which catches me out at times, a little coff and it stalls when at lights or junctions sometimes and nearly throws me off but in this case that's the characteristics of it. My newish Bonneville did it once although not enough to worry about. Is your bike brand fire new or just new to you?

Make sure before you doing anything else that the tickover is set to 1100 rpm on a warm engine and report back.

Had a thought!! When you start her up, do you put her on 1st or 2nd stop of choke/ fast idle? And do you give her a little throttle tweak? The throttle shouldn't be moved when starting as the bike sets its Throttle position sensor (TPS.)
Does she cut out when you push the "choke" back in or when out still?

mine used to do a bit of this at times , especially within the first few minutes of running , once it was properly warm it was fine. However , since I did the conversions on the air return system & the exhaust sensors its never been a problem

Take her back to the shop, get them to sort it, it's new. If it's not right then it's there problem not yours,
